Enjoy This Guilt-Free Recipe for Wild Rice Pilaf

Do you want to eat healthier? Wild rice might be the way to go. It has a number of nutritional benefits and tastes great in a variety of dishes! Case in point, this wild rice pilaf recipe.

Unlike other recipe-bait articles where you have to scroll through a novel to get to the actual recipe, we don’t do that here. Here’s the wild rice pilaf recipe in full and all the ingredients you need to get started.

  • 1 c. wild rice 
  • 4 c. chicken or vegetable stock
  • 1/4 cup salted butter
  • 1 large onion, chopped
  • 1 c. thinly sliced baby carrots
  • 2 c. shaved Brussels sprouts
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning blend
  • 1/4 tsp freshly ground black pepper

Cook the wild rice according to the instructions on the package, substituting chicken or vegetable stock for the water.

While the rice is cooking, melt the butter in a skillet over medium heat. Add the onion and carrots and saute for 5 minutes. Once they start to become soft, add in the garlic, black pepper, seasoning, and Brussels sprouts and saute for an additional 2 minutes. 

When the rice is finished cooking, fluff it with a fork before adding it to the vegetables. Stir it until it is completely mixed. Add additional salt and pepper to taste.
